Feel free to add what ever you would like. These gnocchi come out nice and fluffy and are fairly simple to make. The gnocchi pictured to the left were tossed with olive oil, garlic, spinach, diced canned tomatoes, and canned artichokes (pre-seasoned), with a sprinkle of pepper, salt, and parsley.

Ingredients:
- 1 cup mashed baked sweet potato (takes about 2)
- 1/2 cup whole wheat flour plus about 3 tbsp for dusting
Directions:
- Poke holes and microwave sweet potatoes until soft (usually the microwave has a time setting).
- Let potatoes cool slightly then cut open.
- Scoop out potato and measure 1 cup worth.
- Pour 1/2 cup whole wheat flour into a bowl and add potato. Mix together ingredients until a dough forms (all the flour does not need to be incorporated).
- Sprinkle flour onto a clean surface and knead the dough on top.
- Roll the dough out into 2 logs about 1/2 an inch thick and 1- 1 1/2 feet long.
- Bring a pot of water to boil and drop the gnocchi in. Let the gnocchi cook about 2-3 minutes (until they float to the top)
- Drain the gnocchi
- Before serving toss the gnocchi in a pan with a little bit of olive so they brown and get a bit crispy.
