This may sound crazy, but trust me it is good. Depending on your flour the pancakes maybe a lighter color. I used buckwheat flour so my pancakes were nearly black. But, I would recommend using whole wheat flour, unless you know you like the taste of buckwheat which has a very distinct taste. Matcha powder is one of my favorite ingredients it carries a certain earthiness to it, plus it is good for your metabolism. I saw a recipe for matcha french toast, but I had no bread at home, hence the pancake french toast creation.

Ingredients (1 Serving):
Pancakes:
- 1/4 cup flour
- 4 tbsp liquid egg whites (or 1 egg white beaten)
- 1.2 tsp baking powder
- 1/2 tsp vanilla
- 2 tbsp milk (I used almond milk)
For French Toast:
- 2 egg whites
- 2 tbsp almond milk
- 1 tsp matcha green tea powder
- 1 tsp agave, honey, or 8 drops stevia sweetner
- dash cinnamon
- 1/2 tsp coconut oil
Topping:
- 2 tbsp powdered Peanut butter
- 1/4 cup nonfat greek yogurt
- 1 tsp almond milk
- 1/2 tsp agave or honey (optional)
Directions:
- First you need to make the pancakes. Mix together the egg whites, vanilla, and milk. Then add the the flour and baking powder.
- Spray a pan or griddle and form 4 pancakes using about 2 heaping tablespoons of batter per cake.
- Cook about 1-2 minutes per side.
- Remove from pan and let cool
- In a shallow rimmed bowl mix together the "for french toast" ingredients, other than the coconut oil.
- Place the room temperature pancakes into the liquid mixture and let them soak on each side for 2 minutes.
- In the pan/ griddle (set at medium/high heat) melt the 1/2 tsp of coconut oil and spread around the pan. Place the soaked pancakes into the pan.
- While the pancakes cook mix together the topping ingredients.
- Flip the french toast pancakes after 1-2 minutes, they should be light brown and a little crispy.
- Serve warm with the Greek yogurt topping.
