Over the past week Long Island has been hit hard by snow. Nothing it worse than being stuck inside the house; to pass the time I resort to baking. I threw together this little granola recipe, feel free to mix the ingredients up! I store this in an air tight container in the fridge and when I want to serve it I put it on some aluminum foil and place it in the toaster oven to warm up.

Ingredients:
- 1/4 cup Pepitas (pumpkin seeds,no shell,raw)
- 1/2 cups shelled walnuts (raw)
- 1/4 cup sliced almonds
- 1/2 cup unsweetened shredded coconut
- 3/4 cup Raisins
- 1 cup canned pumpkin
- 3 cups old fashioned oats
- 2 tbsp honey
Directions:
- Preheat your oven to 350 degrees and cover a baking sheet with parchment paper.
- Mix all the ingredients other than the honey together.Press the ingredients onto the pan can drizzle with honey.
- Let bake for 20 minutes
- Remove pan from oven and break apart using a spoon
- Bake another 5-10 minutes until browned
