First off, I hope everyone had an amazing Thanksgiving filled with eating and family fun. I find it awesome that food has the power to bring everyone together; no matter what nationality a person is they will probably agree that when they see family they always eat a lot. Okay, so aside from my little schpeel I want to talk about these awesome cookies. They are a bit high in fat, but if you manage your other meals right you can treat yourself to these. They are made with olive oil which adds a whole different dimension to the cookies. The olive oil makes them flaky and adds that buttery quality to them. Also play around with what you add in these cookies, you can simply do a tbsp of chia seeds, or just flax, or add tons of other super food seeds you know of.

Ingredients:
- 1 1/4 c. almond meal
- 1 tsp chia seeds (optional/interchangeable)
- 1 tsp hemp seeds (optional/interchangeable)
- 1 tsp ground flax (optional/interchangeable)
- 1/2 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp nutmeg
- 1/8 tsp sea salt
- 1/4 cup olive oil
- 1/4 tsp vanilla extract
- 1 - 2 tbsp honey, agave, or maple syrup (I used 1 tbsp and think they are sweet enough)
- If you only use 1 tbsp of honey I recommend adding 1 tbsp almond milk (or any other milk)
- 1/3 cup other nuts or seeds chopped
Optional Drizzle Topping:
- Scoop Chocolate protein powder or 2 Tbsp Coco powder
- 1 tbsp honey
- zest from 1/2 a lemon's to 1 lemon's worth
- just enough water to make it resemble a glaze (2-4 tsps)
Directions:
- Preheat oven to 350 degrees and line a cookie sheet with parchment paper.
- In a large bowl mix together all the dry ingredients, other than the 1/3 cup nuts.
- Add in the olive oil, honey, vanilla, and the possible milk and mix.
- Fold the nuts into the dough.
- Make cookies using about 1 tsp of dough and press them down to about 1/4 inch thick.
- Bake in the oven for 8-10 minutes.
- Take them out of the oven and let them cool for a minute, then place them on top of paper towels on a cooling rack.
