I asked my mom to buy carrots, but I did not specify what type so she bought baby carrots and regular ones. I appreciate that she got me both since she was not sure, however we now have a surplus of carrots. I whipped up this recipe to use up some of the larger carrots since I like munching on baby ones.

Ingredients:
- 1 Scoop Cinnamon Swirl Cellucor protein powder (You can use a vanilla protein powder just add more cinnamon later on)
- 1/4 cup Whole Wheat flour
- 1/2 cup Shredded Carrots
- 1/2 cup liquid eggbeaters, eggwhites or 2 egg whites, or 1 egg
- 2 tsp honey
- 1/8 tsp cinnamon
- 1/8 tsp nutmeg
- 1/8 tsp ginger
- 1/8 tsp all spice
- 1/4 tsp vanilla extract
- 1/2 tsp Baking powder
- 14.2 grams protein powder (I use Bourbon vanilla from Tera's Whey)
- 1 tsp peanut butter (or any nuttbutter)
- 1/8 - 1/4 tsp water
- Mix all the dry ingredients in a bowl (flour, spices, protein powder and baking powder).
- Mix all the wet ingredients(other than carrots) in a bowl and slowly add the dry ingredients into the wet bowl.
- Fold in the 1/2 cup of shredded carrots.
- Heat a pan or skillet and use heaping tablespoons of batter to form pancakes.
For the optional topping:
- Mix all the ingredients together, you may need more water. It is very sticky and tastes like a nougat.
