I finally had some free time this morning to make a new recipe and what better than waffles! These are a super simple single person recipe. If you are using oats you can make the batter and let it sit overnight so the oats absorb some liquid making the dough thicker and more moist. If you do the overnight option follow all the same steps, but just fold in the carrots right before making the waffles. Also, you may need to add some more milk.

Ingredients:
- 1/3 cup and 1 tbsp milk (any type, I used Almond)
- 1/2 cup oats or Spelt flour
- 1/2 tsp cinnamon
- 1 tsp baking powder
- 1/4 cup shredded carrots
- 1 tsp vanilla extract
- 2 tsp stevia (optional)
Directions:
- Preheat a waffle iron
- Mix all the dry ingredients together, if you are using oats put them in a food processor to make it into oat flour.
- Add wet ingredients
- Fold in carrots
- Spray waffle iron with cooking oil and form waffles and let cook until browned and crispy (2 to 4 minutes).
- Top the waffles off with whatever you like!
