I thought a pink cheesecake would be pretty valid since the day I made this was valentines day. But, feel free to use other flavors of protein powder, it is pink because I used strawberry flavored whey. The reason I named it 1:1:1 is because a slice is almost equal in the ratio of grams: fat to carbs, to protein, which is pretty nice because usually cheesecakes are high in fat and not as strong in the protein category.

- 1 scoop whey protein powder
- 1/2 cup almond meal (Ground almonds)
- 1/4 cup coconut oil
- 1/2 tsp cinnamon
- 1/4 tsp baking soda
- 3/4 tsp salt
- 1-2 tbsp honey/agave
- 1 tsp vanilla extract
- 2 tbsp water
- 1 tbsp flour
Filling:
- 8 oz light/low fat cream cheese
- 1 cup nonfat Greek yogurt
- 2 scoops protein powder
- 2 egg whites
- 2 tbsp ground oats
- 2 tbsp peanut butter
- 1 tbsp honey/agave
- 2 large squares Dark Chocolate(optional)
- 1 quest bar(optional)
Directions:
- Preheat oven to 350 degrees and line a spring foil pan with parchment paper(I always find it tricky using parchment paper in round pans, so you may want to just spray the pan with oil).
- Mix together all the crust ingredients and press down in the pan, bake for 12 minutes.
- Let the crust cool.
- In a food processor combine everything other than the chocolate and quest bar.
- Once the filling is made you can mix in chopped chocolate and quest bar.
- Pour everything onto the crust and bake in oven at 300 degrees for 30 minutes.
- Let the cheesecake cool to room temperature then put in the fridge for 2-3 hours prior to serving.
